Question About Chest Presses, Chest Flys, Etc.

There's something that is confusing to me when I do some upper body strength workouts.

Sometimes, Daniel or Kelli will say that "if you don't have a bench, press up into a bridge and do the chest press/fly from there". But other times, when I'm about to do the same exercise in another upper body video, they say to "keep your lower body against the mat", so to NOT press up into a bridge.

Is there a reason why sometimes they tell us to press into a bridge and other times to keep your back against the ground? Thanks.
