Workouts specific for older hikers (60+)

I am specifically looking for recommendations as to how to increase or maintain my Hill Fitness over the winter months. Living in England UK most hikers hiberate a bit over the Dec to March period and would appreciate some workout to maintain Hill Fitness. In essence the average hike might be about 8 miles in length with an ascent of 2500 feet or so on muddy/wet/slippy paths eg Lake District Fells. I do cardio on the Elliptical in the Gym which sort of replicates the hiking action but would be interested in any other specifics. Due to Covid walking/hiking has become very popular so would be good to see FB acknowledge that trend and come up with Activity specific workouts.
