Community Vegetable Challenge


Hello Blenders!

Welcome to day 2 of the vegetable challenge, where we're aiming to eat five servings of vegetables every day for two weeks:


We have already seen turkey and vegetable stew, fresh salads and a green vegetable soup. If you've been enjoying your produce lately, post below with your recipe ideas. Anyone can join at any time.

Today for lunch I had the rest of my leek, pea and potato soup, and I added some chopped parsley and Greek yogurt for decoration this time. Then for dinner I made an incredible salad with little gem lettuce, cucumber, grated carrot, tomato, avocado, sweetcorn and flageolet beans. The dressing was rapeseed oil, white wine vinegar, Dijon mustard, salt and cumin seeds. It was great :-) With that I had more barley, and smoked tofu.
