Earlier in the week I posted about maybe doing a challenge together to eat at least five portions of vegetables per day for two weeks. Here's the original post with the rules and some info about the various categories of veg, plus extra credit and modification options:
We'll be starting next Monday, 25 February, so I'm just posting again to give everyone a chance to plan their groceries over the weekend. Feel free to leave any questions below. I'm hoping we can all post periodically throughout the challenge with tips and recipes, to make these two weeks as delicious as possible.
