The Dish
We wanted to bring as much Mediterranean flavor as possible to breakfast, as well as keeping the prep and cooking time to a minimum (breakfast can be a busy time). The bagel spread is the heart of our Mediterranean flavor. We combine Greek yogurt, lemon juice, lemon zest, oregano, red onion, and feta for a tangy, savory, and creamy bagel topping. Oodles of fresh vegetables are stacked on toasted whole wheat bagels; tomato slices, cucumber slices, baby spinach, and green bell pepper rings round out this amazing breakfast. One of our standing goals is to boost our vegetable consumption, and this bagel helps us achieve that.

Hacking this Recipe: To speed up your morning bagel assembly, feel free to make the spread a couple days in advance. Keep the spread refrigerated until you’re ready to eat.
