I'm so confused about diet

I've recently gained a lot of weight, about 40lbs in 2 years. I've always been able to take it off relatively quickly, but this time not so much. I'm 43 and have a shoulder injury so I've modified my first workout (in 3 years) today. I have no clue what to eat. High carb/low fat, low carb/ high protein, keto, paleo, I'm so lost. I thought fruit and veggies were good but now I'm being told the ones I've eaten have too much sugar and carbs. Its the first I've ever been told not to eat bananas, grapes and that sort of thing. Someone please help.
