Mediterranean barley salad

I made this barley salad for a bbq lunch party last weekend. It's so easy to prepare. Just make the barley tossed in whatever vegetables you like, sautéed or raw whichever way you prefer. I used bell pepper, carrots and onion lightly sautéed, then added cherry tomatoes and cucumbers. Finally finished it off with crumble feta cheese, drizzle of olive oil, lime juice, and oregano. It was yummy, everyone liked it a lot.

A quick tip: use vegetable broth instead of water to cook the barley, it adds extra flavor.

I always feel that barley doesn't get its due recognition as a healthy grain. If you are bored with quinoa and brown rice and would like to try something chewy, nutty flavor, try it. #eatrealfood
