Calories in calories out? food storage question

I have a question, when does food such as fast food, ( i just had a gyro with 2 medium fries lol) turn into fat instead of energy, and effect different parts of the body (insulin hormones etc)? I know there's a bunch of negative carbs in the food i just ate (sugar, fat, etc) I wanted to know so I can use this energy and burn the calories after i digest for a few hours.
