(pescatarian/veggie) meal advice!!!

Hey everyone, you might have noticed that I have written a few posts but I really could do with some meal advice! I work Monday-Friday 8am-4pm. I am wanting to tone up mainly and just be abit more fitter and feel more energetic. I want to know what you guys tend to eat for your meals? I eat relatively healthy but I want to know foods that are super easy and cheap to make that I aren’t majorly time consuming but also really nutritious for breakfast, lunch and snacks. As I work so early I’m never that hungry in the morning but I do like to feel full for the day. Also whilst I’m at work I do get so hungry so I need a substantial lunch and snacks to keep me going for the day. As I want to tone up and build a little strength I know that I need to eat more protein but I am a pescatarian so only eat veggie meals and fish. Any advice would really help me.
