So taco shells only come in 8 and I made 2 each so obvs had to have tacos again. Super disappointed of course! 🙊😂
For this one, I panfried the salmon after coating with a little taco seasoning then shredded. At the same time, I also sautéed red and yellow peppers in the same pan. I cooked some spinach separately and the squeezed the excess water out and chopped avocado then squeezed some lemon juice over. I made my own salsa by reducing some canned tomatoes with garlic and paprika added.
To assemble, pile the salmon and vegetables into the shells. Top with salsa and some chopped spring onion.
