Zucchini Bread Quinoa for breakfast

If anyone is looking to incorporate quinoa or veggies for breakfast, this is not a bad option. Serves 1.

It’s basically 1/4 c of rinsed quinoa, 1/2 cup of milk or water, 1/4 c of packed grated zucchini, a tablespoon or two of raisins, a half to full teaspoon each of vanilla & cinnamon, pinch o salt - stir all ingredients in saucepan, bring to boil, cover, turn heat to low and cook 20 min or until water is absorbed. Fluff and serve. I topped mine with almond meal, almond milk, a tad bit of honey and greek yogurt with a smidge of Neufchatel cheese stirred in for a cream cheese frosting effect 😋
