Sunday brunch

I realised I totally should have made scone dough for my pizza (I’m not good with yeast dough). So I made it this morning, well and because I was out of bread.

This is a wholemeal girdle scone with smashed avocado and poached egg. I do my poached eggs by very lightly oiling cling film inside a cup, cracking the egg in then tying the ends of the cling film up. After boiling, cut open and it’s ready to go. Helps stop the eggs falling apart.

For the scones - I don’t have exact amounts but it would be roughly 1 cup wholemeal flour, blitzed in food processor with 1 tablespoon butter then add enough milk to bring the dough together. I think mine was probably a bit less as only making for 2. Knead lightly and shape. Cook in frying pan in a little butter, turning occasionally - takes about 10-15mins. If you get bored waiting for them to cook, do what I did and cut down the middle once the outsides are browned.
