Greek-inspired lunchbox

Lunches this week are lentil tabouli with feta and a marinated chicken strip. The chicken is marinated in lemon zest, thyme and olive oil then baked. The tabouli is a Jamie Oliver recipe but is just cooked green lentils, chopped mint, chopped parsley, cherry tomatoes, spring onions, olive oil and lemon juice. This is so easy and perfect for these hot summer days.
