Vegetarian Mexican themed lunchbox

Work lunches this week are inspired by baked burritos.

Underneath is a combination of quinoa and red lentils which I just boiled up together

Then on top there is chickpeas cooked with canned tomatoes and chilli powder (mild for me!), chopped fresh tomatoes, avocado, canned corn kernels, chopped lettuce and grated reduced fat cheese. You could use full fat but I don’t like it too oily. Served with some lime wedges to squeeze on top. I’ve unpacked, cooked and chopped everything except the avocados in advance so just need to put it together and add the avocados in the mornings.
