I never liked sweet potatoes. Especially not in savoury meals.
But I accidentally discovered something that completely changed my mind.
I originally tried to make sweet potato waffles.
Total disaster. The waffles failed.
But the batter itself tasted surprisingly good. So I turned it into a breakfast bowl instead — and it’s now one of my favorite high-protein breakfasts.
The best part: sweet potatoes cook in about 5 minutes, so the whole meal is very quick.
Recipe (1 serving)
1. Cook 185 g sweet potato (microwave or boiling) until soft.
2. While it cooks, add to a blender:
1 raw egg
50 ml protein milk
cinnamon
3. Add the hot sweet potato directly into the blender so the heat lightly cooks the egg.
4. Blend until smooth.
5. Pour into a bowl and add:
43 g oats
20 g nuts
6. Once the mixture cools slightly, add:
150 g white skyr (I mix mine with cinnamon and a little stevia).
Macros (per serving)
606 kcal
Protein: 38 g
Carbs: 74 g
Fat: 19 g
