Today I prepared this creamy delicious mushroom-potato soup at home. I used homemade vegetable broth (that I prepare in advance and keep always in freezer) to avoid extra sodium, used organic potato with skin to increase fiber, swapped the butter of original recipe with olive oil, topped it up with pinto beans to increase protein. All these small little ideas to make it more nutritious and healthy, I learned from you guys.
