Cookies :)

Made one of my favorite fitness blender recipes today, the oatmeal cookies! I mixed in semi-sweet chocolate chips and walnuts and one half and (pretty much sure these are processed) butterscotch chips and the other half. I also mixed in equal amounts spelt flour, almond flour, and rolled oats, as well as only using 1/3 of the oil required and subbing the rest with applesauce. They are so delicious! I haven't made these in ages but they are really hitting my sweet tooth in the best possible way.

Next time I may not even use as much oil as I did this time; I think the almond flour provides enough moisture by itself because these turned out pretty soft. I'm hoping as they dry out they will become a little bit more crispy.
