Yesterday "In the Kitchen" Weekend Recap 2-21-22

Happy Monday everyone.

Hope you weekend was fantastic. Did you get some wonderful relaxing with friends or family, get some chores done, or a sweaty workout in? Hopefully you got some time "in the kitchen" to make some fabulously tasting and good for you food. Our weekend was pretty tame in the kitchen this weekend.

Friday night's dinner was a snack plate of organic Triscuit with avocado, salsa, sliced turkey, and a bit of mozzerella. Easy and quick. Saturday was sourdough pizza night. Just a bit of provolone, sundried tomato, black olive, garlic, red and white onion, sauteed crimini, and marinated artichoke hearts. It was yummy fresh and the next day for lunch.

Sunday afternoon Storm used up some bananas that were darkening up to make a banana bread with walnuts and organic choclate chips. Extremely good as always. Sunday dinner was another one of our versions of fish and chips. We buy whole salmon sides (when on sale) and I trim and portion them for the freezer. We had some bellies we pulled out of the freezer for a quick pan sear. Made up a batch of seasoned air fries and served with a side salad. Very nice. We used russet potatoes. Not the greatest for the air fryer. But they were good. A smidge of homemade thousand island dressing for dipping.
