This Zucchini Bean Salad was lunch today! I enjoy changing up veggie salads of all kinds using what's on hand in my kitchen. This is a spin off of Balela Salad. My salad today uses zucchini instead of cucumber; northern beans instead of chickpeas and no onion. And, the dressing was also varied to include garlic, honey and red wine vinegar as found in FB Chickpea Veggie Salad dressing. My garden fresh basil was ready for some picking and did not disappoint in this dish! Pesto will be in the making over the weekend🙂
