1st time making eggplant!

When I can't "shop" my own garden, I've been buying most of my produce at the farmer's market (which I've never been able to afford before getting this job!!!)

Anyway, this past weekend I bought an eggplant! I come from a canned green beans, corn, and carrots family and don't have a lot of experience cooking or eating veggies outside of that.

For lunch I just sauteed my eggplant along with a green bell pepper, some broccoli slaw mix, onions, garlic, and a few tomatoes from my garden. I added salt, pepper, and red chili flakes.

I love making rice bowls so I added the veggie mixture to a serving of brown rice, a little taco cheese, fresh salsa and a little sour cream.

It was so good!!

Just sharing because this is a great way to use up some veggies you've been needing to cook. I'm already excited to eat the left overs tomorrow!
