I have recently started eating ricotta again (haven't had it in a long while). I especially like the one in the picture - it is smooth and creamy, soft and slightly sweet. However, other than eating it with jam / honey or on rice cakes, I have no ideas or recipes.
I am not interested in anything complicated, like making cheesecakes, puddings, cakes, etc... Just combinations, like with what fruit or berries you eat ricotta, if you add nuts, granola, muesli, and so on. I need light combo recipes for breakfast and supper.
