Last nights dinner. Yams, spinach, arugula, veggies (from lunch leftovers) , egg & avocado. All of the warmed items were cooked in olive oil. It might sound weird but I’ve been digging warm salads lately. Sautee veggies, top with avocado & egg or whatever else you please & fits your own nutritional preferences, & mix with chopped greens. You won’t even know the greens are there 😉😂 Delicious.
