Tofu spinach curry with a punch!

Hello FB family we hope your week is going well. Ours is a relaxed one, a less active schedule to our usual but we're embracing it. When we aren't working out fiercely and enjoying our daily dose of hiit, strength, pilates, kickboxing and everything inbetween we love to cook! Even on less active days we always nurture our bodies with good nutrion.

We made this delicious tofu spinach curry that packs a punch! Great way to use the tofu from our haul. We had to share!! ☺☺ Our recipe has 4 serves so we put some away to eat for lunch tomorrow. Its a healthy dish that all curry lovers will adore but no cream of heavy ingredients so we love it! We eat this with brown rice (1 Cup cooked).

INGREDIENTS LIST

2x cups spinach

1 medium brown onion

1 medium tomato

1 green chilli

1 red chilli

Firm Tofu 300g each (2 blocks)

2x spring onions

Fresh coriander

Olive oil

Minced garlic

Chicken stock cubes (vege stock cubes for vegetarian)

Spices: coriander (1 tspn) , tumeric (1/4 tspn), paprika (1 tspn), cumin (1/4 tspn), curry powder (1 tspn)

RECIPE

Step 1) Season your tofu with 1 stock cube

Step 2) Brown your tofu in a lightly oiled pan and put aside

Step 3) Blend spinach, spring onion, chilli and 1 cube with 1/2 cup of water

Step 4) Add olive oil to your pot and cook off onion, garlic, spices and 2 stock cubes.

Step 5) Add tomato and cook mixture through before adding the blended spinach mix.

Simmer for 10 minutes then add coriander

Step 6) Squeeze half your lemon in the sauce and stir in before adding tofu

Step 7) Simmer for 2 minutes and serve with rice or enjoy as it is
