Daily check in - New Recipe

Hello everyone! Hope your week is going well. Disclaimer do not read this recipe while hungry 😆🙂

As you all probably know by now we love food and cooking! Decided to pick up some soba noodles from the shops the other day. We've always wanted to try them.

Thank God for google! We browsed and found a really good recipe which we tried on the spot. All in all takes under 30 minute and really super delicious!!

**A few things to note. We added sesame oil instead of the sesame seeds as we didn't have them. We also used bok choy instead of spinach as we thought it would taste better and it did. Our Soba Noodles pack are sold individually and each pack says 1 serve so we put 2 packs.

Because we didnt have miso, we substituted with 2 salt stock cubes and balanced with soy sauce to really get a nice flavour. We added a teaspoon of sweet soy in addition to regular soy sauce when in calls for it in the recipe.

Finally we added a little bit of lime juice just before serving (1/4 teaspoon) and let it simmer abit. This really balanced the sweet, salty and sour. Go by taste and put more if needed but its basically to balance the dish. Serve and eat!
