Tips for a cooking mom...

My daughter is now 17 months old! Yay! She’s growing in so many different ways that are positive and amazing, but can also be frustrating. One of my frustrations is she doesn’t want to eat veggies. I know that it’s really common, and some days she eats them just fine, while on others, she becomes the picky princess. I know that’s common with toddlers her age, too.

Still, I was hoping to get some tips on how to get veggies into the foods that she always eats..like hidden veggie recipes, I guess? I’ve already tried veggie pancakes...they always turn out too soft and moist, which she doesn’t like...any tips on how to not make it that way? I also always use whole wheat flour for pancakes. I’ve also made veggie oatmeal, which she loves and doesn’t know it’s squash and carrots mixed in with her banana. I’ve made veggie soups, veggie pasta sauce, and chopped veggies very finely for fried rice...but with these, it depends on her mood with whether she wants to eat it or not.

Any advice for me??? I’m not a cook, but I’m a mom that has to cook..lol.
