When you realise your lunch contains 11 different veggies!......

So today I had various leftovers in the fridge from the week so decided to make a quick salad for lunch. Turned out to be one of the tastiest meals!

Earlier in the week I made burritos so we had leftover salsas and some of my healthier take on re-fried beans plus some pickled radish from that. Another day I made black bean and sweet potato burgers so we had some slaw and tomato and onion salad from that. Also had some lime and garlic griddled courgettes. Threw bits in a bowl with some lettuce etc and some crispy chilli tofu.

For some reason all the colours made me count the different veggies and there were 11! (not portions but hey variety is good right!)

The lesson for me is about meal prep, being able to put such a tasty healthy meal together in a few minutes was really helpful.
