HIIT + more rest days VS Cardio/Strength daily

Hi Blenders!

I'm getting back into the swing of my regular workouts and really enjoying being back. My trouble is (and always has been) that HIIT workouts leave me feeling super drained/sore for a few days. I know it's generally recommended you take a day off of strength/HIIT after a HIIT day as well.

My question is, would it be better for me to stick with a moderate cardio workout and a strength workout daily since I can stick to these with minimal rest days OR should I do the HIIT and be out of commission for a couple of days?

My goals right now are to lose the last 10-15 lbs of fat and tone/build muscle if that helps at all. Thank you for your input!
