A Ode to Fresh Vegetables

Like so many, I have been sheltering in place for three and a half weeks. I was able to get in a good shopping trip before going under three weeks ago, but for several reasons, I haven't been able to go since. Eating properly has gotten very difficult this week. I was reduced to (*shudder*) processed soups and rationing the last of my sad, wilted vegetables.

But today was the first day of spring break and I celebrated by going to the store. I came home with peppers, mushrooms, Brussels sprouts, onions, spaghetti squash, tomatoes... and had a lovely, fresh stir-fry for lunch! I could practically feel the vitamin deficiency drop. I have never in my life been so happy for vegetables, and I am so, so grateful right now for everyone in the supply chain who works so hard so I can have them. If there are any farmers out there, or truckers, or grocery workers, or anyone else involved in getting fresh, healthy food to the rest of us, thank you!
