Salmon Quiche for dinner. What?

So yesterday a neighbor of ours brought by three dozen organic eggs from her girls (she has 20 with more on the way; a story for another day). Storm texted me and said "Looks like we will have to make a quiche." I said "take the salmon out of the freezer." Storm wanted to use up some Filo dough we had in the freezer but I forgot to tell her to take it out. So, when we got around to dinner she had to whip up a pie crust.

I started slicing salmon, mushrooms, red onion, and grated 2oz of Asiago cheese. No fresh garlic in this one as time was a constraint. Anyway, the image is the result. The turnover on the other plate is a triple berry tart we whipped together from the leftover crust dough. All organic except for the wild caught salmon.

It was so yummy we ate 2/3 of it for dinner. Have a blessed and prosperous day!
