Recipe: Greek-style chickpea & rice soup

Ingredients:

1 tbsp olive oil

2 celery ribs, diced

2 carrots, diced

1/2 large onion, diced

1 tbsp minced garlic

15 oz can chickpeas (about 1.5 cups cooked chickpeas)

1.5 cups cooked rice, any kind

2 tbsp za'atar spice blend*

1 tbsp poultry seasoning*

Juice of one lemon

4 cups chicken broth (you can use veggie or beef or whatever you have on hand)

Saute celery, carrot, garlic, and onion in olive oil until caramelized. Add za'atar and saute until za'atar is well incorporated. Add chickpeas and rice and stir. Add broth and let simmer 10-15 minutes. Turn off heat and add lemon juice.

Salt and pepper to taste if you like! Makes about 4 generous servings.

* the za'atar i use is a blend of oregano, unroasted sesame seeds, and sumac. if you can't find sumac, i think you can get close to the same flavor with thyme. i know this isn't an authentic version, but it's what i have! the poultry seasoning includes sage, thyme, marjoram, rosemary, nutmeg, and black pepper.
