Low income diet

Hi all,

I noticed this is often not discussed regularly in fitness circles, but a big issue that needs to be addressed is how low to no income can affect the ability to eat healthy. Things like time to prepare meals (working 12 hour days with kids, for example) and ability to buy on the go healthy meals are definitely a privilege and sometimes even a luxury. Specialty food items only found in Whole Foods, Trader Joes, and other health food stores are often not accessible for some (if they even know about it to begin with). Being able to afford a nutritionist if someone is confused about what they should eat, or if they have nutrition or body image issues, is also a privilege.

So my question to all of you who are not so privileged, or have observed this gap in fitness circles: What are some of your favorite meals to prepare with a low budget? What tricks and tips do you have to save time? Are these so-called "time savers" of nutrition really that time saving, do they really work? What information has really helped you along your fitness journey, that worked with your lifestyle, that was sustainable? Do any of you have obstacles that you're willing to talk about?
