Homemade Yogurt Cheese (Labneh)

I made some labneh last night and thought I would share with the FB family.

For those who don’t know, labneh is essentially an Arabic/Middle-Eastern cream cheese like item made from Greek yogurt and salt. A bit more tangy than traditional cream cheese with the goodness of probiotics.

I mixed about 1/2 a large 32oz container of whole milk, plain Greek yogurt with 1/2 teaspoon of salt. Placed the mix in cheesecloth, secured in a sieve over a bowl and let it sit at room temp for 5 hours, squeezing every so often. I got about a 1/2 cup of whey that can be used like buttermilk or added to smoothies.

I leave mine plain and season after the fact, but some people prefer to season the yogurt prior to draining. I like rolling mine in different herbs and spices or nuts/seeds making them ready for spreading or a snack by themselves. Some flavors I have are plain, rolled in sumac, cracked black pepper, dill, everything bagel seasoning and my favorite - encased in date paste. 🤤
