Beetroot Mocha (don't knock it til you try it!)

Good morning FB Fam! Now that it's "cold" in Las Vegas, I've been riding the warm drinks train pretty hard. This year I've been working to convert some old favorites into real food versions. Thought to share another (look up yesterday's Donut NSV post for the first).

Beetroot Mocha

3 small dates (remove the pits!), soaked in some hot water if dried to soften up

1 packet instant coffee or 1 shot espresso or 1/2 cup of strong brewed coffee

1 cup milk (whatever kind you like, heated)

1-2 tbsp cacao/cocoa powder

1/2 beetroot

Blend it up! Since the milk is warm and water is hot, the drink should be ready to serve, but you can always heat it further on the stove. You can always add more dates to make it sweeter.

It's a very beautiful magenta color too :)
