Working out less?

Hi guys

Just wondering if anyone has gone from working out 5 times a week to just 3 times a week?

I usually do

Fri - HIIT + Lower (1 hour)

Sat - Cardio + Upper (1 hour)

Sun - HITT and core (1hour)

Tue - HITT + Lower (45 mins)

Wed - Cardio + Upper (45 mins)

This has been my routine pretty much for a year with addional 5-7 day rests every 6-8 weeks or so

But I might try doing

Sat - HIIT + Lower (1 hour)

Sun - Cardio + Upper (1hour)

Tue - HIIT + core (1 hour)

I walk around 10,000 steps Mon - Fri but wondering if theres any downsides like weight gain from only strength training muscle groups once per week rather than twice? I've gained a few pounds of muscle since working out which is fine but wondering from other peoples experience if theres been any benefits or downsides from changing their routine similar to mine? I know its trial and error for everyone but thought I would ask the question out of interest :)
