Yummy, easy 4 ingredient pumpkin pancake recipe!

100 g pumpkin puree

2 eggs

30 grams flour (any variety: oat, almond, ap, etc)

.5 tsp pumpkin pie spice ( or just add cinnamon, nutmeg, vanilla extract if you want)

Fast and easy: whisk it all together and cook in a nonstick pan with your choice of oil (butter, olive oil, cooking spray etc).

Fluffier and fancy: whisk egg yolks and the rest of ingredients in one bowl. In a second bowl beat egg whites to medium stiff peaks, then gently fold into the other ingredients trying not to loose much air, then cook.

If you’re feeling extra fancy you could add in some chopped nuts, hemp seeds, chocolate chips, whatever your heart desires really.

I had these this morning and man they’re so good! Very calorie friendly (I ate this whole recipe myself for only 381 calories including the maple syrup I added after) and definitely hit that pumpkin craving.
