Struggling to eat for optimal performance/health

I was wondering if anyone has some ideas for staying consistent in eating patterns? I am disciplined with my workouts, but eating consistently is not something I am disciplined in yet. Some days I will do great and eat healthy balanced meals, but more often I skip breakfast and lunch and crash in the evening. Yesterday evening I started shaking and tested my blood sugar (husband is a diabetic so I borrowed his test meter), to realize my blood sugar was low. I just get so sick of food sometimes as well as busy with a family of 6 and eating is just not a priority. Any suggestions? I am home by myself during breakfast and lunch (I work from home), but I generally eat dinner with the family.
