Fennel Salad

Wondering how many of you use fennel.

It’s super light, healthy, refreshing, and plays well with others! Kinda like me. 😉

Anyway, here’s a quick pic of one of #chefinthemaking’s favorites - simple quick-pickled fennel salad.

Oh, and it’s really easy to make, so I’m told.

The version she makes most often simply has fennel, tomatoes, basil, balsamic vinegar, black pepper, lemon juice, orange juice…oh, and a bit of lemon/orange zest.

That’s it.

Super yummy…especially in the summertime.

So, who else uses fennel? Any recommendations?
