One of my go to dinner salads

Hey all!

I wanted to share a favorite dinner salad I make about once a month. I always have some kind of salad with dinner. This particular one is a nice departure from the standard leafy greens, garden salad.

I use chopped spinach, chopped broccoli, shredded red cabbage, shredded carrots, chopped scallions, cilantro, slivered almonds and golden raisins. I use my food processor to save on time.

A big plus is it keeps well! I pack it covered with paper towels in an airtight container. I get a good 5-7 days.

I usually dress it with my favorite blue cheese dressing:

Although, fellow Blender Dotti posted a tahini mustard dressing on IG that I am going to try with this. I hope you don’t mind me sharing, Dotti!

Dotti’s recipe: Whisk together: A heaped teaspoon each of tahini and wholegrain mustard, a couple of tablespoons each of olive oil and cider vinegar (or any vinegar), a couple tablespoons of lime juice and a teaspoon of maple syrup.
