#FB Pot Luck: New Mexican Food

Okay, I am really pleased with how this meal turned out! I could eat it for days! The dinner is a very New Mexican meal!

The red stuff is Carne Adovada- pork shoulder marinated in a red chile sauce and then simmered in the slow cooker. It came out so tender! While I have eaten Carne adovada, I have never made it before.

The veggies are a dish known as calabacitas- sautéed zucchini, yellow squash and corn. Here in New Mexico we add green chile!

I also made pinto beans, cooked with onion, garlic, and red chile.

A more New Mexican dessert would have been biscochitos or sopaipillas, but I decided to include something from when I lived in Arizona- cochinitos/marranitos (“little pig” cookies). They are dense, cake-like cookies with a light molasses flavor, and just a hint of ginger.
