Thai Chicken Salad

My husband and I tried this last night and it was DELICIOUS. I didn't have access to papaya, so I substituted more lettuce and carrots and added chopped roasted unsalted peanuts. It was a tasty way to get lots of nutrition in our dinner, and for people who don't eat meat you could easily sub tofu or grilled mushrooms for chicken. I hope others enjoy it too!
