Healthy Eating Challenge Round 4 - Day 6

Hello everyone!

It's almost the week-end and we baked bread today! *Yes, the simple things make me happy :D*

Early this morning I went to the fish market and bought some fresh anchovies (yes, again - I love them!) and salmon *.* Guess what I had for lunch? Cous cous with anchovies, onions and tomatoes. I also had some sautéed spinach and a tomato salad (bacause it's spring and I've missed tomatoes all winter). Oh, and fresh bread, of course!

Dinner will be that salmon, baked with some rosmary. I'm thinking to have a salad with it - fennels, lettuce, oranges and fresh parsley - and more bread. I can't wait!
