Healthy Eating Challenge Round 4 - Day 3

Hello FB Family!

I'm posting this after a very unhealthy breakfast, hoping that it will keep me accountable for the rest of the day, because that's what I always say, right? It's just one meal, you can always make the next one healthier :)

Long story short, just after my morning work-out, I was (kind of) abducted by some friends who are back home for Easter break, and were craving a good breakfast with all the pastries and other delicious foods that can't be found anywhere but here. What could I do? I ended up eating a bit more than I should have (blame it on the post-workout carbs deficit!), so I'm planning the rest of my meals to be as carbs-free as possible, and as plant-based as can be. No reason why this day can't still be a healthy one!

So, lunch will be cottage cheese and leafy greens salad with tomatoes. For dinner I think I'll bake some fish with onions, carrots, courgettes and fresh herbs (rosemary, anyone?).

Oh, and this time I will edit this just after dinner with a #HealthyDayComplete :)
