stuffing vegetables

Hi guys - I am on a kick where I am stuffing vegetables with all types of fillings. It's been so great! I feel full but not heavy like I did previously when eating rice, pasta, potatoes, couscous, etc 3x per day.

It's also been a wonderful way to clean out the fridge every week. Essentially I will stuff eggplants, portabellas, squashes, potatoes, sweet potatoes, zucchinis, tomatoes by parbaking, scooping out the middle, and filling it with a sauteed/or stirfried something and putting it back in the oven to bake.
