Healthy Eating Challenge Round 4 - Day 2

Hello everyone!

How are you starting this week? Eating healthy, working out, resting, commuting to work? My day will be super-busy, so I'm taking these free moments to post here, now that I can :)

Today's menu will be simply amazing: sautéed anchovies with tomatoes and onions for lunch (and a salad on the side, with lettuce and more tomatoes because...FINALLY, FRESH TOMATOES!). Dinner will be Cody's recipe for marinated cannellini beans, which has become a staple in my diet (and which I recommend you try with any beans: chickpeas, soy, kidney.... It's always delicious!).
