3-Ingredient Cookie - Banana, Oat & Chocolate Chip 😋


I’m supposed to be lying down today, but darn it if I wasn’t craving a little something sweet. These gems from Skinnytaste fit the bill fantastically, so I wanted to share.

I used 2 frozen overripe bananas - thawed & mashed

1 cup of rolled oats I blitzed in the food processor to make more like instant oats.

1/4 cup of mini chocolate chips.

I also added a splash of vanilla, a pinch of salt and a bit of cinnamon.

Stir everything together, drop by the Tablespoon onto a parchment lined cookie sheet and bake at 350 for 15 minutes. 😋 Taste and texture similar to banana bread.

You could probably have a lot of fun with substitutions!
