Hummingbird Cake Cottage Cheese Bowl

So apparently "cottage cheese bowls" are a thing right now--similar to a "smoothie bowl," I suppose.

Well Hubby LOVES cottage cheese, so I decided to come up with this Hummingbird Cake variation for him.

For 2 servings:

1 cup cottage cheese (whatever fat percentage you like)

1 tbsp maple syrup (or to taste--if I was making this for me I would leave this out, but Hubby likes it a bit sweeter)

2 tbsps pineapple juice

1/4 tsp vanilla extract

1/4 tsp ground cinnamon

pinch of ground allspice

pinch of ground nutmeg

Toppings:

Pineapple chunks

Banana slices

Toasted pecans

Toasted coconut (not technically part of a traditional Hummingbird Cake, but delicious nonetheless)

Take all of the cottage cheese ingredients and stir together until thoroughly combined. Divide between two bowls, and add as much of the toppings as you'd like!

Pretty easy, and tastes kinda like a Hummingbird Cake! (Hubby liked it, but I think I'd prefer plain Greek Yogurt over cottage cheese for myself.)
