Healthy Eating Challenge Round 2 - Day 8

How are you today? Ready to officially start week 2 of the challenge? I know I am!

I had a very colourful lunch: tuna salad with peas, lettuce, radicchio, endive, cabbage and tomatoes. Rainbow in a plate *.* Dinner will be chicken with steamed cauliflower and carrots. No mushrooms, sorry Siobhan! But I think I checked off most of your vegetable challenge points :)

By the way, my aunt has just brought a cake still warm from the oven - there's a slice with my name on it for snack!
