Muscle and Endurance — Eating too much or too little.

Hello friends — I work in an industry that requires heavy manual labor with lots of strenuous lifting, and yet also spend a lot of my extra time training for Mountaineering (recently just went to Everest Base Camp) — which requires lots of cardio, and endurance. I cannot for the life of me figure out how to balance the two. I seem to swing between eating a lot to help myself gain muscle so I don't hurt myself at my job, and then gain body fat in addition—— or I train hard with cardio, reduce my body fat percentage for greater endurance, and feel/look great but suffer when I start trying to do heavy lifting at my job. Is there an exercise regiment, and nutrition plan that can accommodate both?
