I’ve had a lot more success getting in veggie servings with the frozen mixed variety. I’d love to do fresh produce, but I don’t have the room for 5 different types of veggies and they surely don’t last as long as frozen. I also keep a small bag of greens. Toss them in the pan with some butter and salt and they’re wilted and ready in 5 min!
Today’s meal is frozen mixed veggies, a scrambled egg, and skillet “fried” potatoes cooked in safflower oil (sometimes olive), all sprinkled with hemp seeds.
Protein, good fat, good carbs, and vitamins/minerals. Yeah!
