Healthy Eating Challenge - Day 11

Hello everyone!

I'm in a bit of a hurry so I'll be brief. Quick update: I got my #HealthyDayComplete yesterday! What about you?

Today's lunch will be some left-over chicken soup and peas, with a salad of whatever veggie is in the fridge. For dinner I'm making salmon rolls, which sound fancy, but are nothing more than smoked salmon rolled around mixed veggies and ricotta cheese, with lots of herbs (parsley, chives and mint). I wish I had some avocado to add to the mix, but it'll be for some other time.
